DirectionsPreheat oven to 350°. Combine salt, peppercorns, fennel and cumin in a spice grinder. Rub the leg of lamb with garlic and then press both sides into rub. Heat a cast iron skillet with some oil, and cook leg of lamb until golden brown on both sides. Move leg of lamb into the oven until internal temperature reaches 135°. Let the leg of lamb rest and serve with mint sauce. To make mint sauce, puree all remaining ingredients in a food processor. |
