Quick Roast Leg of Lamb with Mint Sauce

Leg of Lamb Recipe Ingredients:
- Leg of lamb top round
- 3 cloves of garlic grated
- 1 Tbsp kosher salt
- 1/2 tsp black peppercorns
- 1 tsp fennel seeds
- 1 tsp cumin seeds
- 5 sprigs of mint, stems removed
- 1 small shallot
- 1 small clove garlic
- 2 Tbsp cider vinegar
- 2 Tbsp olive oil
- 1 tsp sugar
- 1/2 tsp kosher salt
Leg of Lamb Recipe Directions:
Preheat oven to 350°. Combine salt, peppercorns, fennel and cumin in a spice grinder. Rub the leg of lamb with garlic and then press both sides into rub.
Heat a cast iron skillet with some oil, and cook leg of lamb until golden brown on both sides. Move leg of lamb into the oven until internal temperature reaches 135°. Let the leg of lamb rest and serve with mint sauce.
To make mint sauce, puree all remaining ingredients in a food processor.
